Physalises grow on a vine year-round in the cold Colombian mountainside. This delicious, gift-wrapped fruit resembles a small tomatillo in size with a brown papery husk that covers and protects the round cherry-sized fruit. The berry is yellow when ripe and provides a deliciously unique flavor that is sweet-tart, refreshing, and slightly acidic. Since Physalises are grown sustainably and virtually wild with little human interference, most people simply remove the husk and pop it in their mouths to enjoy it. The berry can be slightly sticky due to the natural oil that serves as a protectant.
Physalises are commonly used as a garnish in cocktails, desserts, juices, fruit salads, and baking. Their tart flavor also makes them a perfect pairing with cheese and wine or chocolate ganache.
