Samba Papaya Coconut Pancakes

(Serves 2-3)

A surprising twist on pancakes: lightly sweet, slightly savory, and drizzled with spicy honey!

Ingredients:

1 cup papaya puree (from about ½ medium papaya)

½ cup coconut flour

½ cup all-purpose flour

1 tsp baking powder

½ tsp salt

1 egg

½ cup coconut milk

1 tbsp olive oil

1 tbsp fresh lime juice

½ tsp ground ginger

For the chili honey:

¼ cup honey

½ tsp red chili flakes

1 tbsp warm water

Instructions:

In a bowl, mix coconut flour, all-purpose flour, baking powder, salt, and ground ginger.

In another bowl, whisk together papaya puree, egg, coconut milk, lime juice, and olive oil.

Gradually mix the wet ingredients into the dry ingredients until smooth.

Heat a non-stick pan over medium heat and cook small pancakes for about 2-3 minutes per side.

For the chili honey, mix honey, chili flakes, and warm water. Drizzle over pancakes and serve!

Tip: Add crumbled feta cheese or crispy bacon for an umami kick!
