Atemoya & Papaya Chia Pudding
Ingredients:
1/2 ripe atemoya, peeled and cut into small pieces
1/2 ripe samba papaya, peeled and cut into small squares
1 cup coconut milk (or almond milk)
1/4 cup chia seeds
1 tbsp honey or maple syrup (optional)
1 tsp vanilla extract Crunchy granola for texture
Instructions:
Mix the soft atemoya pieces with coconut milk, chia seeds, honey, and vanilla extract in a bowl.
Stir well, cover, and refrigerate for 3 hours or overnight to thicken.
Once set, spoon the chia pudding mixture into serving cups.
Gently mix in granola for added crunch and texture. Top with papaya squares before serving.
